4 large eggs
3 1/2 cups all purpose flour
2 tablespoon cinnamon
2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/2 cups miniature chocolate chips (I added more chocolate chips and I think it was too much, still good but a bit much so stick with the original amount here)
1 cup chopped walnuts
3 9 x 5 aluminum loaf pans (I have never gone out and bought these before specifically to use but since this was a large batch I don't have 3 of these in metal bakeware so I went ahead and bought them... the ease of use was very nice)
Preheat oven to 350 degrees
 Grease and flour three 9x5 inch loaf pans.
 In a large bowl, combine sugar, pumpkin, oil, water, and eggs. Beat until smooth. Blend in flour, cinnamon, nutmeg, baking soda, and salt. Fold in chocolate chips and nuts. Fill each loaf pan 1/2 to 3/4 full.
 Bake for 1 hour, or until an inserted knife comes out clean (mine took an additional 15 minutes on top of the hour). Cool on wire racks before removing from pans. Wrap 2 of them tightly with foil and place in the freezer.
